African Thai Stew

1 Onion
1 Large sweet potato
2 Celery stalks
1/2 Small green pepper
2 tsp Fresh Garlic (from jar)
Peel and cut the onion and sweet potato, add to a pot with 1 tsp Olive Oil and heat. Dice celery and green peppers then add to pot. Add garlic as well. Cook this mixture for a few minutes

Add the following to pot, stir and bring to a boil then reduce heat and simmer for 25 mins:

3 Cups Chicken Broth
1 Can chickpeas
1 can chunky tomatoes(19 oz/540 ml)
1 tsp ground cumin
1 tsp curry powder
1 tsp ground coriander
1 tsp chili powder
2 tsp fresh ginger (from Jar)
1/2 tsp fresh ground pepper
1 tbs lime juice

Once above has simmered 25 minutes add:

3/4 cups cups raising and 3 tbsp of peanut butter
Simer for a few more minutes and serve
It freezes very well

Slow Cooker squash and Chickpea Curry

2 Cups cubed peeled butternut squash
2 cups diced peeled potato
1 can 19 oz chickpes, drained and rinsed
1 Tbsp Vegetable Oil
1 Onion die
2 Cloves garlic, minced
1 tbsp minced gingerroot
3 tbsp mild curry paste
1 can (400 ml) light coconut milk
1 cup vegetable stock
3/4 cup natural peanut butter
3/4 cup salt
2 cups packed swiss chard
1 cup frozen green peas
2 tbsp hoped fresh coriander

In slow cooker combine squash, potato, and chickpeas
In large skillet, heat oil over medium heat, fry onion, garlic, and ginger stirring occassionlly, until light golden (about 7 minutes). Add curry paste, cook about one minute. Add to slow cooker.

Add coconut milk to skillet, scrape up any bits and pour into slow cooker. Add vegetable stock to slow cooker, stir in Peanut Butter and salt. Cover and cook on low for about 4 hours or until vegetables are tender.

Stir in swiss chard and peas. Coer and cook on hight for about 15 mins or until Swiss Char wilts. Sprinkle with corriander.
